Avocado toast with egg and deer bacon is a fun wild game twist on one of the easiest and most satisfying breakfast recipes there is.
What I love about it is that you're getting a hearty, substantial meal in minutes, and you can change it up with your own twist about a hundred different ways to keep things interesting.
Avocado Toast With Egg
Great avocado toast starts with really good bread. A thick-sliced multigrain, sourdough, or whole-wheat bread, toasted until perfectly golden brown, adds another depth of flavor with the creamy avocado.
Scrambled eggs are one of the easiest things in the world to cook but they're surprisingly difficult to get just right. If you cook them for just a minute too long or over-stir them, you'll end up with dry eggs. The secret is to cook them over medium-low heat and to slowly stir the eggs to ensure a great texture.
The Hunt For The Perfect Avocado
It's often hard to find perfectly soft, ripe avocados that are good for mashing and making avocado toast. You want to look for small, dark-colored Hass avocados vs. the bright green Florida avocados.
A perfectly ripe avocado will give to slight pressure with a gently squeeze in the palm of your hand, but not feel mushy. A slightly soft avocado means it's ripe and what you are looking for.
Some small blemishes are fine. Just use a paring knife to remove them before mashing. If your avocado is super brown or super soft, it's past its prime and needs to make a dignified exit out of your kitchen and into your compost bin. An avocado that is under ripe will be hard to mash up and put on your toast.
Everything Is Better With Deer Bacon
This deer bacon recipe takes the succulent, gamey flavor of deer meat and infuses it with smoky, savory bacon goodness. Perfect for hunters who want to use every part of the deer, or for adventurous foodies looking to expand their culinary horizons, deer bacon is a versatile and flavorful ingredient that can be used in a variety of dishes.
Whether you're looking to fry it up for breakfast and serve it with this avocado toast, add it to a sandwich for lunch, or crumble it on top of a salad for dinner, deer bacon is a great choice.
Unlike traditional pork bacon, deer bacon is made from a combination of ground venison and ground pork instead of a whole muscle meat like pork belly. Because deer meat is extremely lean, the pork is added to create that mouthwatering fattiness we all love in traditional bacon. A mixture of cure and smoke adds that crispy, smoky bacon flavor to my homemade deer bacon recipe.
How To Make Avocado Toast And Egg With Deer Bacon
1. Slice the avocado in half lengthwise, remove the pit, and use a spoon to scoop the flesh into a medium bowl. Add the lemon juice, ⅛ teaspoon each salt and pepper and use a fork to mash the mixture until chunky or to your desired consistency. Set aside.
2. In another medium bowl, combine the eggs, milk, and ⅛ teaspoon salt. Use a fork or whisk to beat the mixture until the eggs are well blended. Set aside.
3. Place the deer bacon on a cutting board and chop with sharp knife until your bacon pieces are as small as you prefer.
4. Heat a large skillet over medium heat. When hot, add the deer bacon pieces. Cook for about 5 minutes, stirring occasionally, until the bacon is crispy. Remove the bacon from the skillet and transfer onto a paper towel-lined plate.
5. Use 2 tablespoons of the butter and spread it over both sides of each slice of bread. In the same skillet over medium heat, toast the bread for 1 to 2 minutes per side, or until golden brown and crisp on both sides. Divide the bread between four plates and spread the avocado over the toasted bread.
6. In the same large nonstick skillet over medium-low heat, melt the other 2 tablespoons of butter. Once the butter is melted, slowly add the egg mixture and let it sit undisturbed for about 30 seconds, until you see the edges start to solidify. Use a silicon spatula to slowly stir the eggs, folding them onto themselves while gently shaking the skillet with your other hand. Do this until big soft lumps form, then remove the pan from the heat, season with a little more salt and black pepper, and let the eggs rest for 1 more minute to finish cooking before dividing on top of the avocado toast.
7. Sprinkle the cooked deer bacon (and any other optional garnish) over the eggs and serve immediately.

- 4 slices of your favorite bread

- Everything bagel seasoning
