Goose fajitas are a favorite snow goose recipe, and an easy and delicious weeknight meal that comes together in just 30 minutes.
Snow goose breasts are seasoned, seared and cooked to perfection, then tossed with sauteed onions and bell peppers. A squeeze of fresh lime adds a slight tart and tangy flavor. At that point, the goose fajitas are served with warm tortillas and my wife and daughter's favorite toppings like guacamole and pico de gallo.
Spring Snow Goose Hunting in Missouri
You can’t beat this snow goose recipe to feed family and friends after a successful snow goose hunt like I got to experience with Trophy Wildlife Outfitters in Mound City, Missouri. During that week, the U.S. Fish and Wildlife Service estimated there were almost 400,000 snow geese at the nearby Loess Bluffs National Wildlife Refuge.
While I was there, I got to meet a lot of great waterfowl hunters from around the U.S. during my 3-day hunt. We did pretty well, and I came home with 20 birds so I could develop more goose recipes like a Snow Goose Soup and these Goose Fajitas.
If you don't have access to snow goose, feel free to use duck breasts or Canada goose breasts for this recipe.

- kosher salt
- black pepper
- onion powder
- garlic powder
- chili powder
- dried oregano leaves
- ground cumin
- Sazon Goya seasoning
How to Make Homemade Fajita Seasoning
1. Add the homemade fajita seasoning ingredients to a small mixing bowl and stir together.
How to Make Goose Fajitas
1. Gather all of your ingredients.
2. On a cutting board, tenderize the goose breasts using a Jaccard meat tenderizer and pat dry with paper towels.
3. Reserve ½ teaspoon of the homemade fajita seasoning to add at the end of the recipe. Then generously sprinkle the rest of the fajita seasoning on both sides of the snow goose breasts and use your fingers to press it in. You can cook the goose breasts right away at this point, but if you have time to place them in a Ziploc bag or plastic container and put them in the refrigerator for at least 4 hours or overnight, you'll end up with a lot more flavor in the end.
4. Heat a large skillet over medium heat and lightly coat it with 2 tablespoons of olive oil or canola oil. Sear the snow goose breasts for about 5 minutes on each side until they reach an internal temperature of 130 degrees F using an instant read meat thermometer. Then transfer them from the pan to a cutting board and let them rest while you sauté the vegetables.
5. While the goose breasts are cooking, cut the onions and bell peppers into thin slices. Then while the cooked breasts are resting, sauté the vegetables in the same skillet over medium high heat for about 5 minutes until caramelized.
6. Using a sharp knife, thinly slice the goose breasts.
7. Place the sliced goose breasts back into the skillet, squeeze fresh lime juice on top, sprinkle everything with the remaining ½ teaspoon of fajita seasoning, and stir everything together.
8. Serve immediately with tortillas and other toppings like guacamole, pico de gallo, and fresh cilantro.
