Deer heart, deer liver, deer kidney, and even deer trotters. These offal recipes will help you get more out of your antelope, elk, moose, and deer meat.

The organs of a deer might sound rather awful, but all of these offal recipes have been tested and approved by me, my wife, and our 9-year-old daughter.

Nose-to-tail eating and whole-animal cookery is a passion of mine. I've witnessed far too many hunters leave good and nutritious meat out in the field for the coyotes instead of bringing it home to feed hungry family and friends. Offal has been eaten since time began, and I hope these recipes will help inspire more of my fellow hunters to utilize and appreciate more of the animals we love to chase every fall.
