Venison is lean and healthy and has a distinct flavor some people describe as "gamey". It can get a bad reputation for being tough. However, if the meat is correctly handled in the field and when you get it home, venison surpasses all other proteins. And that especially goes for venison steaks!
Younger animals tend to produce more tender meat. But I've learned from years of experience butchering for myself and clients that hanging and aging venison will have a major positive impact on the flavor and texture. So I beg you not to dismiss an older big buck or bull elk as having the opportunity to turn out just as tender as that filet mignon you've ordered at a restaurant.
