If you want to master Chinese-style stir fry at home, you need to follow one golden rule: prep everything before you turn on the heat. Stir fry is fast and furious. Once you start cooking, there's no time to stop and chop. That means you start with these:

- Your green beans, trimmed and halved.
- Your garlic and ginger, minced.
- Your sauce and slurry, whisked.

How To Make A Goose and Green Bean Stir Fry
1. In a medium bowl, combine the goose breast strips with the marinade ingredients: water, cornstarch, oil, and oyster sauce. Mix well. Let it rest while you prep the other ingredients.
2. In a small bowl, stir together the chicken broth, soy sauce, sesame oil, sugar, and black pepper. Set it aside.
3. In another bowl, whisk together the cornstarch and water to make a slurry. Set that aside too.
4. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the green beans. Stir-fry for about 5 minutes, letting them blister and brown slightly. Remove them from the wok and set aside on a plate.
5. Reheat your wok over high heat. Add the remaining 1 tablespoon of oil. Spread it around the pan. Add the goose in one layer. Sear for 1 minute per side. Let it brown and develop some color.
6. Add the garlic and ginger. Stir-fry for 30 seconds. Breathe in that aroma. You’re doing it right.
8. Pour in the chicken broth mixture. Let it sizzle and come together. Add the cornstarch slurry directly into the liquid. Stir-fry for 15 seconds to thicken.
9. Add the green beans back in. Toss everything together and stir-fry for another 30 seconds over high heat.
10. Sprinkle with sesame seeds if desired and serve immediately with cooked rice or noodles.

Chinese Goose and Green Bean Stir Fry
Ingredients
Goose Marinade
- 1 Canada goose breast (about 10 ounces), cut into thin 2-inch strips
- 2 Tablespoons water
- 2 teaspoons vegetable oil
- 2 teaspoons cornstarch
- 2 teaspoons oyster sauce
Stir Fry
- ½ cup chicken broth
- 2 teaspoons soy sauce
- 1 teaspoon toasted sesame oil
- ¼ teaspoon sugar
- ⅛ teaspoon black pepper
- 2 teaspoons cornstarch
- 1 Tablespoon water
- 2 Tablespoons vegetable oil, divided
- 1 pound string beans (trimmed and cut in half crosswise)
- 1 Tablespoon minced garlic
- 1 teaspoon fresh minced ginger
Instructions
- In a medium bowl, combine the goose breast strips with the marinade ingredients (the water, cornstarch, oil, and oyster sauce).
- In a small bowl, combine the chicken broth, soy sauce, sesame oil, sugar, and black pepper.
- In another small bowl, whisk together the cornstarch and water to make a slurry.
- Place a wok over medium-high heat, and add 1 Tablespoon of vegetable oil. Add the green beans. Sauté the green beans on all sides for about 5 minutes. Remove the beans from the wok and set aside on a plate.
- Reheat your wok over high heat, and carefully spread remaining 1 Tablespoon of vegetable oil around the entire inside of the wok. Now spread the goose breast strips on the wok in one layer, and sear for 1 minute on each side.
- Add the garlic and ginger, and stir-fry for 45 seconds. Then add the chicken broth mixture you prepared earlier.
- Add cornstarch slurry, being sure to pour it directly into the standing chicken broth, and stir-fry for another 15 seconds. Next, add the green beans and continue to stir-fry over high heat for another 45 seconds. Serve immediately.
