The Best Snow Goose Soup
This Snow Goose Soup Recipe makes a delicious and aromatic broth that’s packed with snow goose, lo mein, bok choy, and Asian flavors making it our favorite snow goose recipe. This is also one of the best things to eat this time of year here in North Dakota, where it's soup season for most of the year! I love coming up with easy dinner ideas for all of you. But we're using snow goose legs and thighs for this dish, which need a long, slow cooking time to become tender. That's ok because you can't rush deliciousness for one of the best goose soup recipes you'll ever make! The entire process takes a couple of hours, but you don't have to stand over the pot the whole time. A little stir every 20 minutes will suffice.Our 7-year-old daughter will tell you this goose soup warms her all the way through, from the inside out. And it’s fun to eat! The combination of shredded snow goose meat, vegetables, and lip-smacking lo mein noodles makes perfect leftovers for me to send with my wife to work to enjoy throughout the week. I used snow goose here, but you can also use Canada goose, duck, or even pheasant.SNOW GOOSE HUNTINGSnow goose hunting season is fast approaching here in North Dakota, and not a minute too soon. Duck season is a distant memory. Early Canada Geese won't start up again until August 15. What better cure for waterfowl withdrawal than to put yourself in a muddy field surrounded by hundreds of white windsock decoys? If you want to come to North Dakota in the coming weeks, just know that snow goose hunting takes a lot of work. Like all goose hunting, it starts with lots of scouting. There are big decoy spreads to set, often in muddy fields. On the other hand, there are no bag limits and no possession limit and you can use unplugged guns and electronic callers. If you put in the extra effort, the reward can be a hugely successful hunt you never knew was possible. HOW MANY SNOW GOOSE DECOYS DO YOU NEED?Enormous snow goose flocks mean it takes a lot of decoys to impress those traveling snows streaming north this time of year. Decoy spreads of over 1,000 decoys are common to see on guided snow goose hunts, but about 250 set in the right place at the right time can work as well.Start small on your budget. If you and a few friends all chip in on an assortment of different decoys, you’ll have enough to start out. You can add a few every year to fuel your snow goose hunting addiction.Full body decoys provide the ultimate in realism, which makes a huge difference because adult snow geese are extremely wary and fooling a flock of 1,000 birds means you have 2,000 eyes to try and deceive. Full bodies require serious commitment because they aren’t cheap. They'll run you about $30/each. Do the math. If you want to place 100 full body decoys in a field that will cost you $3,000. And you haven't even bought a bag to store them in yet!A dozen Snow Goose Sock Decoys will run you about $65/each. You'll want a minimum of 12 dozen of those. After sales tax we have now spent a total of $4,000 just on the decoys. GUIDED SNOW GOOSE HUNTSAre you read to book a guided snow goose hunt yet? It's not a bad idea. Ingredients
- skinless legs and thighs from 2 snow geese
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 3 Tablespoons sesame oil + more to drizzle on top at the end
- 2 Tablespoons minced garlic
- 8 cups chicken broth
- 4 green onions, sliced into rounds
- 3 baby bok choy, quartered
- 1 15-ounce can cut baby corn
- 2 Tablespoons oyster sauce
- 2 Tablespoons soy sauce
- 2 teaspoons ground ginger
- 8 ounces lo mein
Instructions
- Rinse the goose pieces and pat dry. Season with salt, pepper, and garlic powder. Heat sesame oil in a 6-quart Dutch oven over medium-high heat.
- Brown the goose pieces on each side for about 3 minutes.
- Add the minced garlic and sauté another 1 minute.
- Add the chicken broth and stir together.
- Cover and cook for about 2 hours over medium-low heat, stirring every 20 minutes. At this point, the goose meat should be falling off the bones. If they aren’t, cook a little longer.
- Remove the lid and use tongs or forks to shred meat off the bones. Discard the bones.
- Add the green onions, bok choy, baby corn, soy sauce, oyster sauce, and ginger. Simmer over medium-high heat for 10 minutes to soften vegetables.
- Add the noodles to the soup and cook according to package directions.
- Season soup with more salt and black pepper if needed. Divide among warm bowls, drizzle each bowl of soup with about 1 teaspoon of sesame oil, and serve immediately.
