Big Mac Tacos
Season the ground venison with salt and black pepper and portion it out into six balls that weigh about 2 ½ ounces each.
Place each ground venison ball onto a 6-inch flour tortilla and smash it down so the meat is flat, leaving about ½-inch of space on the outside edge of the tortilla. Then brush the meat side of each tortilla with about 2 teaspoons of olive oil.
Cook with the ground venison side down on an pan or griddle set to medium heat for about 90 seconds holding it down flat using a burger press or a spatula.
Flip the tortilla and immediately top the crispy cooked venison with a slice of cheese and let it cook for another 30 seconds to warm the other side of the tortilla, then transfer to a rimmed baking sheet. If using a skillet or pan vs. a Blackstone griddle, repeat the process until all of the Big Mac Tacos are cooked.
Top each taco with shredded lettuce, hamburger pickles, and about 2 teaspoons of the Big Mac sauce. Serve immediately.
