Cook the rice according to package directions, about 15 minutes. The girls and I will only eat ½ cup cooked rice per person, but if you have hungry teenagers you are feeding you might want to double the amount.
Meanwhile, add oil and venison to a large skillet over medium-high heat and break it up with a wooden spoon or spatula until it's fully cooked, about 5 minutes.
Reduce heat to medium and stir in the brown sugar, hoisin sauce, soy sauce, garlic, and ginger.
Add chopped red bell pepper and cook for 3 minutes more, stirring often.
Serve the venison over the rice and garnish with chopped green onion and sesame seeds.
