This fish casserolehas creamy cheesy fish baked under crispy buttery bread crumbs. It's super easy to throw together – and it's done in only 20 minutes.
Bring a large pot of water to a boil and add 1 Tablespoon salt. Add spinach and cook for 1 minute. Immediately remove spinach with a strainer and transfer to a paper towel-lined plate.
Add the fish to the boiling water and cook for 1 minute. Remove with the same strainer and transfer to a large mixing bowl.
Add the shrimp to the boiling water and cook for 1 minute. Immediately remove with strainer and transfer to same large mixing bowl.
Let the fish and shrimp cool for about 5 minutes then drain off any water that collects at the bottom of the bowl, or use a paper towel to soak up any liquid at the bottom of the bowl.
To the fish and shrimp, add mayonnaise and Old Bay Seasoning and stir to coat.
Sprinkle on the cheese and cooked spinach and stir again to combine. Transfer the fish mixture to your prepared casserole dish, spreading it evenly into the pan.
Melt remaining 2 Tablespoons of butter in the microwave for about 10 - 15 seconds.
Then in a separate small bowl, stir together the 2 Tablespoons melted butter and ½ cup panko bread crumbs until crumbs are evenly moistened. Sprinkle crumbs over the fish mixture.
Bake uncovered at 375 degrees F for about 15 minutes or until the center reaches 145 degrees F using an instant-read thermometer. Now broil for about 2 minutes to brown the bread crumbs. Let it cool slightly for about 5 minutes before serving.
