This quick and simple smoked salmon salad is loaded with cucumbers, cherry tomatoes, onion, fresh dill, and capers, and finished with a Greek yogurt dressing and crunchy bagel-chip croutons.
In a large bowl, whisk together 2 tablespoons dill, oil, capers, 1 tablespoon lemon juice, ¼ teaspoon salt, and ¼ teaspoon black pepper.
Add salmon, cucumbers, and onion, and gently toss to combine. Let it sit for 5 minutes.
Meanwhile, in a small bowl, stir together Greek yogurt, 1 tablespoon fresh dill, 1 teaspoon everything bagel seasoning, ½ teaspoon lemon juice, ⅛ teaspoon each salt and black pepper. Set aside.
Add tomatoes and bagel chips to the salmon and cucumber mixture and toss to combine.
Divide the salad between two dinner plates. Spoon a dollop of the yogurt mixture over the top, then sprinkle with the remaining 1 tablespoon fresh dill and the remaining ½ teaspoon everything bagel seasoning. Serve immediately while the bagel chip croutons are still wonderfully crunchy.
