Goose fajitasย are a favorite snow goose recipe, and an easy and delicious weeknight meal that comes together in just 30 minutes. Snow goose breasts are seasoned, seared and cooked to perfection, then tossed with sauteed onions and bell peppers. A squeeze of fresh lime adds a slight tart and tangy flavor and the goose fajitas are served with warm tortillas and my wife and daughter's favorite toppings.
You canโ€™t beat this snow goose recipe to feed family and friends after a successful snow goose hunt like I got to experience with Trophy Wildlife Outfitters in Mound City, Missouri last week. The U.S. Fish and Wildlife Service estimates there are currently almost 400,000 snow geese at the nearby Loess Bluffs National Wildlife Refuge.
I got to meet a lot of great waterfowl hunters from around the U.S. during my 3-day hunt and came home with 20 birds so I can develop more goose recipes for all of you to try.
If you don't have access to snow goose, you can use duck breasts or Canada goose breasts for this goose breast recipe.
GOOSE FAJITA INGREDIENTS
If you're a busy parent like me, you love meals that only require a few basic ingredients. This goose fajita recipe is just that. All you need are a few goose breasts, onion, bell peppers, lime juice and spices, plus tortillas and your favorite toppings like guacamole and pico de gallo. Itโ€™s incredibly easy.
This snow goose recipe is a one-pan recipe. In just 30 minutes, youโ€™ll have a tasty meal that also makes for great leftovers to bring to work for lunch the next day.
HOMEMADE FAJITA SEASONING
While you can buy pre-made fajita seasoning, nothing compares to the flavor of homemadeย fajita seasoningย and itโ€™s easy to whip up in minutes. Hereโ€™s a quick rundown of the spices youโ€™ll need:
– kosher salt
– black pepper
– onion powder
– garlic powder
– chili powder
– dried oregano leaves
– ground cumin

HOW TO MAKE GOOSE FAJITAS
Once youโ€™ve made your homemade fajita seasoning, the goose fajitas come together quickly. Just follow these simple steps:
1. Tenderize the snow goose breasts. On aย cutting board, tenderize the goose breasts using aย Jaccard meat tenderizer and pat dry with paper towels.
2. Season the snow goose breasts.ย Generously sprinkle the fajita seasoning on both sides of the snow goose breasts and use your fingers to press it in. You can cook the goose breasts right away at this point, but if you have time to place them in a Ziploc bag or plastic container and put them in the refrigerator for at least 4 hours or overnight, you'll end up with a lot more flavor in the end.
3. Cook the snow goose.ย Heat a large skillet over medium heat and lightly coat it with 2 tablespoons of olive oil or canola oil. Sear the snow goose breasts for about 5 minutes on each side until they reach an internal temperature of 130 degrees F using an instant read meat thermometer. Then transfer them from the pan to a cutting board and let them rest while you sautรฉ the vegetables.
4. Sautรฉ the onion and bell pepper.ย While the goose breasts are cooking, cut the onions and bell peppers into thin slices. Then while the cooked breasts are resting, sautรฉ the vegetables in the same skillet over medium high heat for about 5 minutes until caramelized.
5. Mix together.ย Using a sharp knife, thinly slice the goose breasts and place them back into the skillet, squeeze fresh lime juice on top, sprinkle everything with the remaining 1/2 teaspoon of fajita seasoning, and stir everything together.
6. Serve immediately with tortillas and other toppings like guacamole, pico de gallo, and fresh cilantro.
CAN YOU MEAL PREP GOOSE FAJITAS?
You can absolutely meal prep these goose fajitas! This snow goose recipe is a great choice to make ahead as the sautรฉed goose breasts and vegetables will keep forย up to 4 days in the fridge. Just store them in a sealed container and then reheat before adding to a tortilla.

Homemade Fajita Seasoning

  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder

  • 1/2 teaspoon ground cumin
  • 1 Sazon Goya seasoning packet (1 teaspoon)

Goose Fajitas

  • 4 boneless, skinless snow goose breasts (from 2 birds)
  • 1 yellow onion, cut into strips
  • 3 bell peppers, cut into strips
  • 2 tablespoons olive oil or canola oil
  • 1/2 lime
  • tortillas
  • pico de gallo
  • guacamole
  • fresh cilantro

  • Add the homemade fajita seasoning ingredients to a small mixing bowl and stir together.

  • Gather all of your ingredients.
